Salted eggs are normally brined duck eggs. The process involves soaking boiled or steamed eggs in brine for 20 to 30 days (sometimes longer) or packing each egg in damp, salted charcoal. At the end of 30 days, take one egg out, boil it and give it a try to see if it’s salty
enough. In most cases, the white part is very salty, however the yolk is not. If you are happywith the result, start draining off some of the brine and take each egg out and place them in the fridge for consumption, or whenever you crave for it.
